Winemaking
Chilling of the harvested grapes and protection from oxidation. Direct pressing, followed by a low temperature static settling. Fermentation is carried out between 60 °-64°in order to bring out the wine’s exotic aromas.
Soil: Sandy soil on one part of the vineyard and clay limestone on the other part.
Côtes de Gascogne
Côtes de Gascogne is a wine-growing district in Gascony producing principally white wine. It is mainly located in the département of the Gers in the former Midi-Pyrénées region (now part of the Occitanie region), and it belongs to the wine region 1111. The designation Côtes de Gascogne is used for a Vin de Pays ("country wine") produced in the Armagnac area. The decree of 13 September 1968 created the difference between a Vin de Pays and simpler table wine, the so-called Vin de table. The designation Côtes de Gascogne obliges the producers to respect the stricter rules and production standards, which were adopted with the decree of 25 January 1982.

The Land
Aimé Roquesante is made in the foothills of the Massif des Maures, its roots firmly in the classic traditions of Southern French wines. From this very special setting in the commune of Vidauban, the wines reflect all the rich nuances of their terroir. The soils here are exceptionally free-draining, and enjoy the dry, protective influence of the Mistral wind. As they develop here in the shelter of the Argens Valley, the region’s classic grape varietals revel in the warm, sunny Mediterranean climate.
