Collovray & Terrier Saint Veran Tradition Bourgogne Blanc
Saint-Véran lies between the escarpments of Solutré and Vergisson (from which the Domaine des Deux Roches takes its name), on the southernmost slopes of a 250 km long and 5-6 km wide prehistoric limestone ridge that runs through the valleys carved out by the river Soâne.
Its vineyards are among the few in Burgundy with a southerly aspect, which exposes the vines to maximum sunlight and warmth, as well as winds that help to moderate their temperature and stimulate photosynthesis. This allows Chardonnay to develop physiological ripeness quickly, under stress, in a precarious continental climate.
Varietal: 100% Chardonnay
Vinification
The grapes are pressed slowly in a pneumatic press. The free-run juice is then drained and left to settle at low temperatures. It then undergoes alcoholic fermentation, malolactic fermentation, and lees aging in vat until the following spring (April/May). Lees stirring takes place throughout the maturation period.
Tasting Notes
Saint-Véran 'Tradition' is a pale gold wine with rich floral aromas complemented by hints of pear, green apple, peach and apricot, all well-integrated on the palate and reinforced by creamy oak notes, and a medium to long floral finish.
Service & Food Pairing
Serve lightly chilled (10-13˚C). This wine pairs well with fish, seafood, and poultry. It is equally suited to a number of cheeses: goat's cheese, blue de Bress, Comté, Beaufort, and Gruyeres.
Packaging & Storage
Comes in a traditional Burgundy bottle, with a natural cork, in cartons of 6 or 12 bottles. Store horizontally and consume within 2-3 years.
Collovray & Terrier
The unfolding of the century in a vineyard in the Mâconnais
Like all good stories, the Collovray & Terrier one is full of twists and turns as well as new beginnings. It was though underpinned by a strong guideline from the origin, more than eighty years ago: the desire to highlight the terroirs of the Mâconnais.
Everything, or nearly, comes by two at Collovray & Terrier. Two families, two names, two men, Christian et Jean-Luc, two sisters, Brigitte et Florence. But also two rocks, Solutré et Vergisson, two domains, Les Deux Roches and Antugnac, two regions: the Mâconnais and the Haute-Vallée de l'Aude. And finally two tradings: Collovray-Terrier and the Closerie des Lys. 50 and 500m, the vines of Châteaux d'Antugnac weave their way up the slopes of the valley and across the valley floor. The soil is made up of chalk, sandstone, and marine fossil, and on these cool climate terroirs, the wines develop expressive fruit flavours and a freshness unique in Languedoc.
From 1928 to the present days, this beautiful family business, with deep roots in the prestigious terroirs of the Mâconnais, diversified, developed and opened onto the world. This dynamism along with the respect for well done work, this combination of farmer common sense and entrepreneurial spirit has allowed to give birth to a house wholly dedicated to the pursuit of quality and expression of the quintessence of the terroirs which it cultivates in Burgundy or in Languedoc-Roussillon.
Collovray-Terrier : Crossed Destinies
Two is better. At least, as far as love stories are concerned... Christian Collovray and Jean-Luc Terrier have known each other since childhood and have shared the same passion for the vine and the wine. Their links strengthened when they got married with two sisters, Brigitte and Florence. They are from a winemaker family but their father died when they were teenagers. With the four of them, they imagine the birth of a domain around the vines which the father of Christian owned in Davayé. Christian Collovray went into business in 1985. Jean-Luc Terrier joined him the year after.
1986 : Birth of the Domaine des Deux Roches
From these weddings, a beautiful baby was born, child of the beloved terroirs of the Mâconnais. The Domaine des Deux Roches was brought into the world in 1986. Offspring of the crossed personal histories of the Collovrays and the Terriers, it is and will remain a family business first. The Christian name of the domain is naturally obvious! Indeed, all the plots of vines grown by the Collovrays and the Terriers are spread in the surroundings of the prehistoric rocks of Vergisson and Solutré, the region emblems.
From the start, the roles are shared harmoniously: Christian takes care of the vines while Jean-Luc manages the cellar and the commercial part. As far as the wives are concerned, they first worked in the vineyard then in the bottling part before devoting themselves to more administrative tasks as the company grew.
The affection between the four musketeers of the beginning remains intact and the team, always united and motivated, has grown. Employees joined the domain. And the family history went on with the arrival of Julien Collovray, the son of Christian, in 2008. He joined the family domain after a complete training (winegrowing, oenology, law and economics) and fulfilling experiences: one year on a domain in Virginia (USA) as well as a few work experiences in France. And the story was to continue with the arrival in 2013 of Kevin Tessieux, Julien's brother in law.
1997 : Purchase of the Château d'Antugnac, in the Aude
If the generational handing down did take place, the history did not only carry on in the Mâconnais. Driven by their passion for the Chardonnay and the Pinot Noir, the two historic grape varieties of Burgundy, the Collovrays and Terriers were looking for new challenges to meet. In 1997, a neighbour from Villefranche-sur-Saône suggested then to purchase the Château d'Antugnac in the Haute-Vallée de l'Aude, nearly 600 km south-west, on the borders of the Pyrenees. This domain, in the Languedoc, is set on the terroirs of the Limoux appellation, recognized for its production of white and sparkling wines since the XVIth century.
Although clearly more southern, these terroirs share some common points with the Mâconnais: the grape varieties of course but also the altitude which allows the vines to gain aromatic finesse and also the soils which, sometimes, are riddled with shells like at the foot of the Solutré and Vergisson rocks. In 1997, the castle as well as the domain clearly required the enthusiasm and the determination of both the Collovrays and the Terriers to restore their prestigious image. An objective achieved today.
