These grapes are harvested by hand in small trailers of 2500 kg and transported to the winery. A selection is made on a table where the berries are separated from the stems. Then, the first fermentation is made in a small deposit of 12,000 kg., maceration is done to extract more aromas and fruit flavors and pleasant tannins. Later, we press and second fermentation, called malolactic, occurs in American and French new oak barrels. Once the second fermentation is over, we rack the wine and we store for one year in these barrels already cleaned. Once the aging process is finished, it is bottled and remains bottled for a year.

Legacy & Winery
Luis Saenz wines are elaborated with grapes from an area called El Castillo located in El Cortijo, in the heart of La Rioja Alta.
Surrounding this castle, defensive tower of the depression of the Ebro River, are our century-old vineyards, from where the Sierra Cantabria is dominated, with its peculiar León Dormido Mountain.
In these poor, clay-calcareous lands, our grandfather planted this beautiful vineyard "El Castillo" at the beginning of the last century, one of the oldest vineyards on our property and, possibly, of the entire Rioja Denomination of Origin.
Currently, this legacy, in the hands of the Sáenz Family, is traditionally cared for and cultivated to obtain the highest quality and to elaborate our wines with its own personality and name: Luis Saenz.
Luis Juan Saenz defines himself as a winegrower aware of the fact that his work culminates and is rewarded in obtaining these great wines that bear the family name of this legacy: Luis Saenz, from our grandfather to our days; joining tradition, culture and innovation.
