Santa Ema Reserva Cabernet Sauvignon
Maipo Valley, Chile 2017
Denomination of Origin: Maipo Valley, Isla de Maipo. Our vineyards are planted along the banks of the Maipo River, where the terroir manifests all of its expression in one of Chile’s oldest and most classic wine regions.
Variety: 100% Cabernet Sauvignon, hand-picked from in mid-April.
Tasting Notes
Color: Deep violet-ruby red.
Aroma: Elegant, sophisticated, and complex with fruity notes of black cherries and plums mingled with tobacco, coffee, and toast.
Palate: Well structured and round with ripe tannins and abundant texture and a long finish.
Gastronomy: Pair with grilled meats, well-seasoned dishes, stews, and ripe cheeses.
Aging: 100% of the blend in French and American oak barrels for 8–10 months.
Vinification: The grapes were crushed and fermented in stainless steel tanks for 7 days at 86ºF (30ºC) followed by another 6 days of post-fermentation maceration. Upon completion of the malolactic fermentation, the wine was barrel aged for 8–10 months to obtain and deliver greater complexity and structure.
Vintage
The 2017 vintage for Chile endured massive complications but eventually came out on top.
Spring saw fierce frosts that damaged crops but the real danger came during summer when soaring temperatures brought some of the worst bushfires in history. The intense heat led to drought which not only cut yields but caused surviving grapes to ripen more quickly leading to an extremely early harvest.
Despite concerns around smoke taint, and some wines were affected, some good wines were made. The reds tend to have a nice fruity character.

Maipo: The Maipo Valley is firmly established as a producer of exceptional Merlot, Cabernet Sauvignon and other Bordeaux varietals. Santa Ema has two primary cellars in the valley: Izaga and El Peral. The cooling influence of the Maipo River on one side and the Andes Mountains on the other extend the growing season, while the shallow, alluvial soils provide ideal conditions for the valley’s red varietals.
Cachapoal: Located 10 miles inland from the Pacific Ocean, the cool winds blowing through the Rapel Valley allow Carmenere and other red grapes exceptionally long hang time.
Casablanca: Characterized by a cold, ocean-cooled climate, white wines from this region possess a tremendous fruitiness and elegance.
Leyda: Even cooler than Casablanca, wines of this region possess a tremendous minerality and sophistication, led by outstanding Sauvignon Blanc, Chardonnay and Pinot Noir.
